Write it the same day, every day
A diary's value is that it was written before anyone knew there would be a dispute. Entries filled in on Friday for the whole week read as what they are, and a reconstructed diary is worth a fraction of one kept as the job ran. If a day produced nothing, write that: an unbroken run of dated entries makes the loud ones credible.
